Hunter G. Hall-Moderator & Presenter

A progressive Santa Monica based hospitality consultant and operator with extensive experience in nightclubs, hotels, restaurants and special events.

Hunter co-founded Archetype in 2009, a full service management and operations firm for small to medium sized hospitality businesses.

As a past President of the California Restaurant Association’s Los Angeles Chapter, he is a regular speaker at seminars in the L.A. area covering issues specific to the hospitality industry. He is considered a thought leader in Alternative Compensation Models (A.C.M.’s) and is regularly called upon for advice and practical insight on the topic.

His other specialties include concept repositioning, menu development, culture crafting, H.R. compliance planning, disaster management (bankruptcy, hostile takeovers), design (interior, menu, web), team building (recruiting, training, coaching), & marketing. Also, he has a killer beard.

Beth A. Schroeder

Beth A. Schroeder is a labor and employment attorney, representing restauranteurs and other business owners in employment related matters, including wage and hour class actions, harassment litigation and prevention, preparation of employment related manuals and other documentation, employee training, and strategic counsel to upper management. Beth is currently a Partner in the Century City office of Raines Feldman, LLP, where she heads up their Labor and Employment Group. After working with employers for 34 years, last year, Beth also co-founded and launched kendr, a tech based start-up that facilitates better communication between employers and employees through an app/software platform.

Brad Metzger

Brad Metzger has earned the reputation as an authority in Hospitality Recruiting and Human Resources, having been quoted by the LA Times and Nation’s Restaurant News. He has moderated and appeared on panels and seminars at venues across the country including The Western Food Expo and he speaks on Hospitality Recruiting at UCLA courses in Restaurant Management as well as at LA Trade Tech Culinary Dept. In 2018 Brad teamed up with The LA Times and created the LA Chef Conference. This years LA Chef Conference 2019 has grown to one of the largest culinary and restaurant business conferences ever on the West Coast. www.lachefconference.com Brad resides in Santa Monica, California with his wife Lynda, a Hospitality Design Professional.

Chef Mark Mittleman

Chef Mark Mittleman has run kitchens at Leo & Lily, West Restaurant at the Angeleno Hotel, and The Polo Lounge at The Beverly Hills Hotel. He has opened, refreshed and shaped operations and menus at myriad Southland restaurants as consulting chef and on stints as a private chef.

Known for his rustic-meets-modern approach, he was tapped to be managing partner and executive chef of Art’s Table. Since launching FNA four years ago, he has helped develop two more Westside locations, Ashland Hill and Ox & Son, where he served as partner and chef consultant.

In 2017 Mark purchased Wheel House Cheese and Wine in Culver City. A thriving cheese and wine shop has emerged. He also recently opened Punta Cabras, a Mexican concept, in Santa Monica in early 2018.

Chef Nguyen Tran

Nguyen Tran and his chef wife, Thi Tran, co-founded Starry Kitchen, a casual and fun-loving pan-Asian restaurant that began in 2009 as an illegal underground operation running of out of their North Hollywood apartment.
Their apartment (yes, their apartment) quickly rose to the #1 Asian Fusion dining spot in the city on Yelp, and gained a loyal fan base that has followed them on their culinary adventures all over LA including their most recent spot in Echo Park- Asian Restaurant Barcade, Button Mash. Their story has been told in The New Yorker, New York Times, LA Times, NPR, Food Network, Cooking Channel and in his memoir/cookbook "Adventures in Starry Kitchen: 88 Asian-Inspired Recipes from America's Most Famous Underground Restaurant " which was published in 2017 by Harper Collins.

Stephane Bombet

Stephane Bombet is the founder and owner of Bombet Hospitality Group (BHG). He co-founded the critically acclaimed Terrine, Faith & Flower, Hanjip, Viviane, Picca, Mo-Chica, Paiche and Blue Tavern restaurants in Los Angeles and Santa Barbara. Stephane is currently a partner at Faith & Flower in Downtown Los Angeles, Terrine, Viviane and Hanjip in Culver City. Stephane preceded his LA success story with several world-renowned restaurants and nightclubs in Paris, France. He has 23 years of hospitality experience, domestically and internationally, and over 20 restaurants, bars and night clubs that he has been involved with.

Jason Berkowitz

Raised in Cleveland, Ohio, Jason Berkowitz is a hospitality veteran dedicated to developing and growing hospitality teams and operations.

Berkowitz’s career spans to over 40 restaurant openings from fast-food to fine-dining. He served as VP of Operations for Umami Burger, COO for Tocaya Organica, is a partner in The Madera Group and the founder of ArrowCertification - online harassment prevention training.
